We see that Rebbi Yehuda deems the skin of those four sheratzim thick enough to be viewed as hide; although he actually adds a fifth one to the list. Why does this not indicate to us that (according to the Rabanan as well) these four are considered to have proper hides and not the others – also with regard to Shabbos?

Rebbe Yehuda does indeed hold the same for Shabbos as he does for Tuma. As for the Rabanan, Tosafos explained that we wouldn’t necessarily look at the thickness of their skin. It is only since the Pasuk adds some Sheratzim and excludes some others, that we divide them based on their thickness.
